"Fried" Mozzarella

1/3 c almond flour 1/3 c grated parmesan cheese 1 tbs Italian seasoning 2 eggs 1/4 tsp salt 1/4 tsp pepper 3 tbs olive oil
8 oz block of low moisture mozzarella
In a medium bowl combine flour, grated cheese, and Italian seasoning.
In a separate bowl, whisk eggs with salt and pepper.
Cut cheese in half both width wise and then lengthwise before cutting into 1/4 inch batons.
Coat cheese in flour mixture, then egg, then back in flour. You can double coat.
Freeze for at least 30 minutes.
Preheat oven to 450° F.
Coat frozen mozzarella in Olive oil and place on a parchment lined baking sheet. Bake for 15 minutes, then turn over and bake another 5-7 minutes.
Cool 5 minutes on baking rack.
