Growing up, banana, pumpkin, and zucchini bread were breakfast staples.
Unfortunately, as we all know, bananas are not low carb. These muffins are 10.5 net carbs (if you can squeeze that into your macros one day) and TOTALLY worth it.
1 oz banana
1 tbs avocado oil
20 g almond flour
1/2 large beaten egg
5 grams walnuts, crushed or chopped
1/4 tsp baking powder
Pinch of salt
1. In small bowl, beat egg and set aside.
2. In a ramekin add banana, sweetener, vanilla extract and oil. Mash and mix.
3. Add half of beaten egg, almond flour, a pinch of salt, walnuts, and baking powder to banana mixture. Mix thoroughly.
4. Microwave on high for 45 seconds or until set in the middle.
