Keto Kickstarter Meal Prep Recipes


Quick recipes for your meal prep!

Teriyaki Chicken

1-1.5 lbs boneless skinless chicken thighs, cut into 1-inch pieces

1/2 onion, diced

1 large zucchini, diced

Marinade:

1/2 c soy sauce

3 cloves garlic, chopped or crushed

1 tbs rice vinegar (optional)

1 tbs toasted sesame oil (optional)

1 green onion, chopped

1 small piece of ginger, grated

1/4 c Truvia or Erythritol (more or less, depending on how sweet you like your sauce)

In a large skillet heated to medium, add oil. Swirl in pan. Add onion, and cook until translucent. Then add zucchini and mushrooms. Cook until zucchini is fork tender and then remove veggies from pan. In the same pan heat more oil and cook chicken with marinade. You may add a 1/4 tsp of xanthum gum to thicken the sauce. When chicken is done, add veggies back in and stir.

Tuna Salad

2 hard-boiled eggs, diced

2 cans tuna

1/2 can sardines

1/2 green onion, chopped

1 tbs sweet pickle relish (optional)

1/4 c mayo

Salt and pepper to taste

Mix all ingredients in a bowl. Enjoy!

Garden Frittata

6 eggs

1/2 medium tomato

2 oz cheddar, shredded

1/4 c heavy cream

1c. spinach

1/4 c parsley, chopped

Salt and pepper to taste

Preheat oven to 350 degrees F. Whisk eggs with heavy cream, add veggies, cheese, herbs, salt, and pepper. Add cheese and divide into 6 muffin cups or a well greased pie pan. Bake for 15-20 minutes or until eggs are set (no longer wiggly, or you can check doneness with a toothpick).

Meatballs

1/2 lb ground beef

2 oz parmesan cheese, grated

1/4 c almond flour

1/2 onion, diced

3 cloves garlic, chopped

1/4 c parsley, chopped

1 beaten egg

1/4 c water

Salt and pepper

Preheat oven to 350 degrees F. Add all ingredients to a bowl, season with salt and pepper and mix. Roll into 2 tbs size balls and place on a sheet pan. Cook for 15-20 minutes, or until meatballs are browned.

Berry Smoothie

3 oz blueberries

1 oz baby spinach

1/2 c heavy cream

1c water

1c ice

Add all ingredients to a blender and blend!
