So you've got the grocery listm and you've seen the meal plan. How do you prepare all this food without overwhelming yourself? Here's a quick guide to optimize your time.
On your meal prep day (Either Saturday or Sunday) you will:
Preheat your oven to 350 degrees F
Add 5 eggs to a pot, cover with cold water and bring to a boil
While eggs are boiling, dice your tomato, cucumbers, onion, zucchini. Chop your garlic, green onion and parsley, and grate your ginger. Measure out almond flour, and grate your parmesan cheese. Set all these things aside (DO NOT MIX, put aside separately)
-This is called “Mis en Place”. By doing this step, when you prep your other foods, everything will be ready to go!
By now your eggs will be done. Drain off the hot water, and let the eggs cool in ice water.
While eggs are cooling cut the chicken thighs for teriyaki, prepare marinade, mix and pop into the fridge
Next, take half of the ground beef and form into 2 patties, place between parchment paper, place into ziplock bag and freeze.
With other half of ground beef, make meatballs, roll, and place on a sheet pan.
Next, in a large bowl make frittata mixture. Mix thoroughly and divide into 6 muffin cups (or a well-greased pie pan)
In your preheated oven place sheet tray of meatballs, and veggie frittata into oven.
While meatballs and eggs are baking, cook the teriyaki chicken on the stove.
Bake meatballs and eggs for about 20-25 minutes, until meatballs are browned and the eggs are set (eggs are no longer wiggly, you can stick a toothpick in to see if it comes out dry)
Allow your food to cool, before storing in the fridge or freezer.
While it’s cooling, prepare the tuna salad and place it into the fridge.
Almost an entire weeks worth of meals, all done! Good job!
